I’d probably sort variants by inventory dynamically rather than manually reordering them every week, especially if stock moves fast. Just be careful if “highest inventory first” means pushing the least desirable flavor, because customers may notice that too. The workaround a lot of people use is duplicating the product after import and leaving only one color variant on each listing, but it does mean managing inventory a bit more carefully.
